You may have missed.
Signings
Karim Cassim (16, midfielder): From City. A technical, goal-scoring central midfielder who has already featured for City’s U18s.
David Eze (16, midfielder): A tall, powerful, composed box-to-box player (often compared to a young Paul Pogba in style), England youth international/captain at U16 level, and highly regarded as one of the top talents in his age group.
He is set to sign professional terms when he turns 17.
Isaac Konde (16, winger from Liverpool) — Expected to join soon, but not confirmed as signed today.

Do we sign the Colombian kid too yet?

Yep, Orozco signed a week ago, I believe.

What's even more impressive with these signings is that we are signing them from our main rivals, which for me speaks volumes about these players and where they see as best for their future.
On top of this, we are signing Tottenham's top talent as well.
I expect some fans will put a negative spin on these players' reasons for coming, but I think it's exciting and a good sign for the club.

Let's hope that one of them comes through and breaks into the 1st team.

Simo
That's the key. They get to circa 19 and can go either way, as we saw with Garnacho.

We have not signed Cassim and Eze yet. We are hoping to do so, but it is yet to happen.
As for Orozco, I posted last week that he had signed. The intention with him is to play him in the U21s and watch how he adapts. A decision will then be made as to possibly sending him on loan.
There is clear intent from the club to continue investing in the academy, and, obviously, a couple of major successes now could potentially save many millions given how transfer fees are going.

We have signed Eze and Cassim.

There has been a clear intention since INEOS have bought into the club to focus on developing young players and bringing the best youth players to the club.
You've got these three lads who we are looking to sign, plus we've already signed Cristian Orozco and Tynan Thompson this window.
Plus, we've signed Ayden Heaven, Chido Obi, Sekou Kone, Diego Leon, and Enzo Kana-Biyik.
If we get those three over the line then that makes 10 youth signings. Even if only 2 or 3 of them prove to be good enough for the first team squad, then that will represent phenomenal value in the current market.
That doesn't include young players we have signed for the first team such as Yoro, Sesko, Lammens, Dorgu, and Andrey Santos.
Yet, that's also been balanced out well with signing players who are in their prime like Cunha, Mbeumo, MdL, Mazraoui, and Tielemans.
The only two signings I'd say we can categorically say haven't worked out are Ugarte and Zirkzee. Both signed in their first summer, mere months after taking over and with limited time to plan and without their men in and settled to run things. Even then, I can see the logic behind the signings, and neither will end up costing us significantly, we might even be able to break-even on those deals, or at least close to.
The thing I find very reassuring is just how little gets leaked now. With the exception of Sesko, we haven't had any long drawn out transfer "sagas", and I don't feel we have massively overpaid for anyone either. Very professional. Which is why I'm so calm this summer, why I didn't panic when deals for supposed targets never materialised. I just feel that they will get the job done and bring in the right players for the right prices.
